Caramelized Shrimp and Scallops with Sparkling Cider Butter

INGRÉDIENTS

 

8 large shrimp
8 large scallops
3 shallots finely minced
30ml Vinaigre de cidre de pomme Les Vergers Lafrance apple cider vinegar
1 small applediced
250ml Cidre Mousseux Domaine Lafrance sparkling cider
125g unsalted butter
Salt and pepper

PRÉPARATION

 

  1. In a lightly oiled skillet, sauté shrimp and scallops over high heat, 3 minutes on each side
  2. Combine shallots, cider vinegar, diced apple and sparkling cider in a saucepan. Bring to a boil and reduce liquid by 3/4. On low heat, add butter while stirring. The butter must not separate.
  3. Serve sauce over shrimp and scallops, with a side of julienned carrots and sugar snap peas.
